About the Event

Canopy is honored to host ‘Sustainability in the Food and Beverage Industry.’ This event will focus on generating an engaging, educational discussion about the environmental preservation and evolution of food and beverage. The panelists will discuss these ideas, speaking from both a micro and macro perspective. How can regenerative farming practices and social change impact the global climate crisis? From an economic and social point of view, how can we change our way of interacting with our environment more sustainably? Our panelists are excited to answer your questions and to present new consumption alternatives that we can offer our world.

Kyle Connaughton - SingleThread

Kyle Connaughton is a chef, culinary educator, and cookbook author. He and his wife, farmer Katina Connaughton, opened SingleThread in Healdsburg, California in December 2016.SingleThreadhas garnered critical nods including aSan Francisco Chronicle4-star review, the“Miele One to Watch” award from The World’s 50 Best Restaurants, and a three-star rating from the Michelin Guide. Last October, Kyle, and Katina received a Michelin Green Star for their focus on sustainable gastronomy. Kyle is a consulting culinary educator for the Culinary Institute of America and a co-founder of the culinary science development firm Pilot R+D

Jesse Katz - Aperture Cellars

Jesse Katz is a Colorado-native who trailblazed his way to the West Coast early in his career. In a remarkably short period of time, Jesse made himself into one of the most respected wine professionals in California. He was the first winemaker ever to be included in the Forbes 30 Under 30 list, a Wine Enthusiast 40 Under 40 Tastemaker, and had been named a Wine Spectator “Rising Star.” After working with some of the most established winemakers in the world at Screaming Eagle, Pétrus, Viña Cobos, and Bodega Noemia to name a few,  Jesse opened his own state of the art winery and luxury hospitality space in Healdsburg CA, on the Aperture Cellar's Estate.  In addition to the Aperture Cellar's Bordeaux inspired wine project, Jesse's wine brands also include Devil Proof Vineyards, where he produces a record-setting 100% Malbec, and the highly acclaimed The Setting Wines.

Anthony Mynt - Zero Food Print

Anthony Myint is the co-founder of Mission Chinese Food, The Perennial, and Zero Foodprint. Myint is the 2019 winner of the Basque Culinary World Prize and Zero Foodprint was named the 2020 Humanitarian of the Year by The James Beard Foundation. ZFP leads a public private collaboration with regional governments in California and Colorado to scale regenerative agriculture. Restaurants and businesses that participate in Zero Foodprint are directly funding climate beneficial farming projects that transform bad atmospheric carbon into healthy soil carbon.
